Creamy, dairy free Whole30 Instant Pot Lasagna Soup is the perfect way to have a clean soup and satisfy the soul at the same time.
So comforting, because who here doesn't love lasagna? If you don't love lasagna I am not sure why you clicked on a lasagna soup post.....but maybe I can still change your mind?
This soup is also low carb and paleo friendly!
We have all the aspects of a lasagna combined into a healthy soup made with clean ingredients to replace the ingredients that are not compliant when you don't eat gluten or dairy.
Whole30 soups are a great thing to have on hand. You have a ton of food that will reheat well and make several meals. Finding one that is family friendly is a bonus.
Make it family friendly
I love when a clean recipe can be made into a meal my kids will eat by making it plain af.
I consider this meal to be more kid friendly than traditional lasagna. It is easy to separate out what your kids WILL eat from the soup.
Just take out what your kids will eat or leave off what they won't. You could even make a side of gluten free noodles and put their soup over the noodles if they aren't into zucchini!
Ingredient notes and substitutions
- Cashew Ricotta (recipe below) will replace the dairy ricotta in traditional lasagna. It is super easy to make so don't be stressed.
- Zoodles- I like frozen but feel free to use fresh and adapt the cooking time
- Marinara Sauce - When you are Whole30 you must read labels for marinara sauce. Find a sugar free sauce like this one.
- Ground beef- feel free to use your favorite ground beef. Turkey, sausage or a mix of all will work perfect.
Expert tips
- Soak- to have ultra smooth cashew ricotta be sure to soak them first in super hot water. You can even soak overnight.
- Quick release- a quick release is opening the pressure valve after the food is cooking immediately. You don't let it sit longer on warm or in the pot with the lid still pressurized or it will continue to cook.
- If using fresh zucchini- you may need to pre boil a minute or throw in the microwave to adjust the cooking time that frozen naturally does within the soup.

Whole30 Instant Pot Lasagna Soup

Quick and clean whole30 instant pot lasagna soup that will satisfy your cravings for comfort food in a healthy way.
Ingredients
Soup
- 1.5 lbs ground beef
- ½ onion chopped
- 2 cloves garlic, minced
- 24 oz Whole30 compliant Marinara Sauce ((be sure to read labels))
- 24 oz chicken broth
- ½ tsp salt
- ¼ tsp pepper
- 1 tbsp basil, dried
- 12 oz frozen zucchini zoodles
Cashew Ricotta
- 1.5 cups whole raw unsalted cashews
- 2 tbsp apple cider vinegar or lemon juice
- ½ tsp salt
- ¼ cup water
- 1 tbsp nutritional yeast (optional but strongly encouraged)
- ¼ tsp onion powder
- 1 tsp minced garlic
Instructions
Cashew Ricotta
- Prepare your cashews first. Place cashews in a bowl and fill with very hot water. Soak in VERY hot water for 10 minutes or more.
- Drain cashews from water.
- Add cashews and remaining ingredients to a food processor or strong blender like a Vitamix. Blend the cashews and ingredients until the consistency of ricotta cheese. (like a rough pudding)
You will need to stop and press the ingredients down into the blender as you go so everything is incorporated.
Soup
- Start with turning the instant pot on to "saute" let the instant pot heat until it says 'hot'. While it is heating chop your onion and garlic.
- Once it reads 'hot' add your ground beef and brown. Stir often as the instant pot saute function is pretty warm and things stick quickly. Brown until it is no longer pink, then add your onion and garlic. Saute with beef for a minute or so.
- Next, turn off your instant pot and add marinara sauce, chicken broth, salt, pepper, and basil. Stir until combined well.
- Close the lid and set to manual for 5 minutes
- After the instant pot has finished cooking turn it off. Then quick release the heat by turning the pressure valve. Remove the lid and stir.
- Add your frozen zucchini noodles. The zoodles will cook in the heat of the soup and be tender to eat in less than 2 minutes! The instant pot does not even need to be on!
- At this point you need to decide how you want to add your cashew ricotta. Add a tablespoon or so on top of each bowl or add a half a cup into the soup before serving. Stir and then add additional to each bowl if desired.
