    Irresistible Healthy Buffalo Chicken Sliders

    Healthy buffalo chicken sliders that taste sinful instead of healthy. Crispy potato slices topped with mildly spicy shredded buffalo chicken with smooth and creamy ranch dressing and green onions to top them off. Epic is an understatement.

    Oh hey you, I see you creeping looking for a recipe that's good for you but satisfies all those bad food cravings for game day.

    Or who even needs a game day for these? Buffalo chicken is perfect for any day in my opinion. Whether it is board game day, ladies night out day, or freaking Tuesday. Anything that ends with "day" is perfect for comfort food.

    And guess what? I have the recipe for you. I have the buffalo chicken slider recipe that you're friends and loved ones that don't want to eat healthy will still love.

    You know why? Because first we have potatoes. Crispy potato slices cooked to perfection serve as your slider base.

    Then we have super easy rotisserie shredded chicken tossed in a buffalo sauce flavored with a little garlic powder and some coconut oil instead of butter.

    Then do you know what we put on top of the chicken? We obviously put on some creamy dreamy ranch dressing. But we needed some more crunch so we added green onions to make this buffalo chicken super fresh and super delicious.

    What makes these sliders healthy?

    These buffalo chicken sliders are Whole30 compliant, and basically anything Whole30 is healthy, that's just a fact of life.

    They are also paleo, dairy free and full of good for you ingredients because we added potatoes instead of bread for the base.

    The buffalo sauce is made with only a handful of ingredients including heart healthy, low inflammatory coconut oil.

    But I pinky promise these sliders do not taste healthy. If you have a friend or husband, that refuses to eat healthy on game day, just put a plate of these out and watch them be devoured.

    In fact, you better make a double batch. My husband and I were fighting over who got the last ones!

    How to make

    These sliders are super easy to make. We use rotisserie chicken to make this taste amazing and go quickly in the food prep. The longest/hardest part is slicing your potatoes because you do want them to be even sized thickness.

    So first you roast your pototatoes covered in olive oil, salt and pepper. While the potatoes are roasting you shred your chicken and make the sauce!

    Making the sauce is as simple as tossing hot sauce, garlic salt and coconut oil together in a sauce pan and heat till warm and combined. Toss that shredded chicken in the sauce and then it's time to make some sliders!

    Layering the sliders goes quick, add the toppings and boom. You are ready to chow down!

    Ingredients and Substitutions

    To make these sliders you will need the following ingredients:

    • rotisserie chicken
    • russet potatoes
    • franks hot sauce
    • coconut oil
    • salt/pepper
    • garlic salt
    • green onions
    • ranch dressing
    • olive oil (for baking)

    Ingredient notes and substitutions

    Rotisserie Chicken- you can use any chicken you want. Rotisserie is just too easy to pass up and tastes incredible. Use any part of the chicken you want, this dish is for you baby. Just be sure to shred and chop so that it is super small. You want to be able to put a pretty dollop on each slider.

    Russet potatoes- don't' sub these friends. I do not allow it. If you do you could end up with a mushier not as sturdy base. Also your base won't really be very big if you use something like a golden potato. Russet gives you a nice strong texture and big size.

    Hot sauce- you can't really sub this if you want buffalo flavored chicken. You can use less and it will be less spicy. Or if you can find a "buffalo sauce" you could sub that in. A bottled "buffalo sauce" isn't as clean as just good ol' Frank's Hot Sauce.

    Coconut oil- you can use ghee or butter instead. If you are Whole30, stick with the coconut oil. I also recommend unrefined coconut oil, because it doesn't taste like coconut.

    Ranch dressing- You can use any ranch dressing that you love or have on hand. If you are not Whole30 I suggest you make my Vegan Dump Ranch. If you don't feel like making dressing, this Tessemae's Creamy Ranch dressing is a great healthy one to buy. It is also Whole30.

    Now you are all set to go make some buffalo chicken to slide on into your mouth!!

    Irresistible Healthy Buffalo Chicken Sliders

    Description

    Healthy buffalo chicken sliders that taste sinful instead of healthy. Crispy potato slices topped with mildly spicy shredded buffalo chicken with smooth and creamy ranch dressing and green onions to top them off. 


    Ingredients

    Scale
    • 5 medium/large russet potatoes, washed and dried
    • 2 cups of finely shredded, chopped rotisserie chicken (see notes)
    • ½ cup Frank's Red Hot Sauce
    • 1 rounded tablespoon of unrefined coconut oil
    • ½ teaspoon of garlic salt
    • ¼ teaspoon of salt
    • sprinkle of black pepper
    • 2 tablespoons of light tasting olive oil
    • 2 green onions
    • ¼ -½ cup of ranch dressing, Tessemae for Whole30 or  I used my Vegan Dump Ranch

    Instructions

    1. Gather your ingredients and preheat oven to 425°F.
    2. Prepare a baking sheet with parchment paper and brush 1 tablespoon of oil on the parchment paper.
    3. Slice your potatoes into ¼"inch round slices. Be sure to make these all uniform thickness so they cook the same. Place the sliced potatoes onto the prepared baking sheet and brush with the remaining 1 tablespoon of oil. Sprinkle salt and pepper evenly over the potatoes. Place in preheated oven and bake for 25 minutes or until golden and slightly crispy on the outside, some may have golden bubbles. You do not need to flip. 
    4. While your potatoes are cooking prepare your sauce. Place the hot sauce, coconut oil and garlic salt in a small sauce pan and heat to a light simmer on medium heat. Whisk to mix to a smooth texture and simmer for 3 minutes stirring occasionally. Remove from heat. 
    5. In a medium bowl, toss your shredded chicken with the heated buffalo sauce until all chicken is covered evenly. Set aside.
    6. Chop your green onions by using a knife to remove the root and the tough green parts. Thinly slice the remaining onion.
    7. Once potatoes are finished baking remove from oven and begin to make the sliders by layering the ingredients. Place 1-2 tablespoons of chicken on each potato slider. Next top with a sprinkle of green onion  and then add ranch dressing. 
    8. To add the dressing use a spoon to drizzle over the top of each slider. 
    9. Serve warm and enjoy! 

    Notes

    • When lining the potatoes onto the baking sheet, try to leave a little space between each one so that they are not touching
    • When slicing your potatoes, it is easiest to chop of about ½ inch of the each end of the potato so you have slices that will lay flat. 
    • I recommend light tasting olive oil or an avocado oil when baking the potatoes. Anything that won't have an overly strong flavor
    • You want to chop your chicken pretty small so that when it is placed on the potato, it stays.
