It's Greek week here on sweet rustic bakes and the recipes all lead to an epic Meditreanian Power Bowl. But each recipe is so good on it's own they get their own post.
So what is Greek salsa? Well to me this salsa is part salad, part relish. Just like a pico de Gallo salsa. Chopped bite sized veggies that are perfect for scooping with a chip if you need an appetizer.
Also an amazing topping for grilled chicken or your next Greek bowl (hint, hint). This dish would even make a great chopped veggie salad. Maybe we should name it the Greek multi tool. That sounds appetizing right?
I don't hate vegetables but I am definitely not in love with them as much as I love meat. I do however love certain raw vegetables, and cucumbers, tomatoes, and red onion are all on the top of the list. This is a super easy way to get more veggies in while tasting good.
This salsa/pico de gallo/ salad/ multi tool is really easy to make. So it gets a really easy post. I mean, how long can I really talk about chopped veggies with some dressing on them? I can try and keep going on but I am not sure anyone even reads this stuff any way so what is the point yo?
How to make Greek Salsa
Like I mentioned earlier, this is s.i.m.p.l.e to make. You chop your veggies, throw them in a bowl, add the Greek dressing. The end. Whoop whoop, that is simple.
Now hopefully you already made your 3 Minute Greek Dressing, because I know you live and breathe LLM posts and just can't wait to try them. But in case you haven't you get two choices for the dressing. I highly encourage you to make this perfecto dressing. But if by some chance you don't have 3 minutes to spare, I hear you. You do you, and use store bought Greek dressing. Simple just got even simpler. I recommend this* for a clean healthy store bought dressing.
Change it up
Don't be afraid to add some of your other favorite Greek flavors to this salsa. Here are a few ideas that would be fabulous:
- Chopped pepperoncinis
- Chopped kalamata olives
- Feta cheese
- Squeeze of lemon

Description

Ingredients
- 1½ cups chopped English cucumber
- ½ cup chopped grape tomatoes
- ½ large red/purple onion- minced
- ¼-½ cup Greek dressing (homemade or use store bought)
- 1 garlic clove - minced
Instructions
- Chop: Chop all of your veggies into small bite size pieces. Mince your garlic and onion.
- Dressing: Make your dressing or use store bought
- Mix: Mix your veggies and the dressing into a bowl. The longer it marinates the better the flavor. For the homemade dressing I used ½ cup. Start with ¼ cup and taste for your liking. Add more if desired.
- Enjoy! Serve chilled, and keep in a glass container with sealed lid. Lasts up to 3 days in the refrigerator.
Notes
Don't forget- You can add any of your other favorite Greek flavors to this salsa. Don't be afraid to add things like feta cheese, pepperocinis, and kalmata olives.
