Flourless peanut butter blondies are the perfect gluten free dessert. They come together super fast and are moist and chewy. With a touch of sprinkles they are even fun for the kids.
Hey hey friends! Thanks for stopping by today. I really do love it when you come to visit. Especially on a day with such a perfect treat for you to make this weekend. Your kids will adore these gluten free flourless peanut butter blondies. Bonus, they won't even know they are a healthy dessert.
I know blondies don't usually have sprinkles. But I made these the first time on New Year's Eve so the kids had a fun treat to eat. They loved them! But turns out I loved them even more, because I ate most of the next day with my coffee.
They are an excellent breakfast, in my opinion. And with the major ingredient in these flourless peanut butter blondies being peanut butter I felt OK with my breakfast decision. Actually if I am being honest it wasn't even breakfast. It was a pre-breakfast of sorts.
My breakfast appetizer. That's totally a thing in my world. It is that or I eat like 5 breakfasts every morning. Breakfast appetizer sounds more sophisticated.
Moving right along, these gluten free blondies are very easy to make and they only require a handful of normal ingredients. They come together fast however there is a but. You must wait for these to cool completely before cutting or eating. Or else you get a crumbly blondie.
But! If you wait until they cool completely you will be rewarded with the best moist and chewy blondie that doesn't fall apart in your hand.
I am not above eating cookies crumbled into piles in my hands, I just don't want you to think I steered you wrong, and you made a recipe that doesn't stick together. They will friend, they just need to cool.
???? Ingredients for Flourless Peanut Butter Blondies
To make these blondies you will need the following:
- Peanut Butter- I used an all natural peanut butter. The kind that is runny. If you use the same kind, be sure to stir your peanut butter before hand REALLY well so they do not turn out oily.
- Baking Powder and Salt
- Chocolate Chips- use whatever you have on hand or like
- Coconut Sugar
- Sprinkles- (optional) I used these, they are organic and gluten free and natural colors
How to make Peanut Butter Blondies
To make these you can only use one bowl! How exciting is that?!
First prepare your baking dish with parchment paper. Line a 10x6 or 8x8 inch baking dish with parchment paper. PRO TIP! If you crumble your parchment paper up until a ball, then add the tiniest drop of water on it, and then squish around some more, your parchment paper becomes soft and easy to work with. It will line your baking dish much easier.
Next grab a large mixing bowl. Measure and add all of your ingredients into the bowl except for your chocolate chips and sprinkles.
Mix well and when well combined fold in your chocolate chips.

Place your blondie mixture into a prepared baking dish. You will need to use your hands to press the mixture evenly into the dish.
Top with sprinkles! I am not going to tell you an amount, just judge what your kids will love! I believe in you.
Bake in a 350°F oven for 20-23 minutes. They are done when they have puffed up and have become golden in the middle and slightly golden brown on the edges.
Remember, these need to cool completely before you should attempt to cut or eat these. Let the blondies cool in the baking dish for 20 minutes. After 20 minutes GENTLY use the parchment paper to help you lift the blondies out of the dish and cool the remaining of time on a cooling rack, still on the parchment paper.
