Description
Tangy balsamic grilled chicken tenders topped with sweet yet tart strawberry salsa that is just begging to be eaten on your next spring or summer cookout day! This fresh grilled chicken dish is healthy and bursting with flavor.
Ingredients
Strawberry Balsamic Salsa
2 cups of strawberries (about 8 med/large), diced small
1/4 of red onion, finely diced
1/2 of jalapeno, deseeded and finely diced
1 tablespoon of honey
1 tablespoon of balsamic vinegar
1 tablespoon of finely chopped fresh mint (about 4 leaves)
Balsamic Chicken Tenders
1 ½ - 2 pounds of boneless chicken tenders
1 teaspoon of salt
¼ teaspoon of black pepper
2 tablespoons of light tasting olive oil
3 garlic cloves, smashed
1 tablespoon of balsamic vinegar
2 tablespoons of water
Instructions

Place all ingredients for the chicken into a gallon bag and seal. Release the air out and then mix the ingredients around and coat the chicken evenly. Marinate in the fridge for 30 minutes or up to overnight.

In a medium bowl, add all ingredients for the strawberry salsa and gently stir with a spoon to coat. Place in the fridge until ready to use. I recommend it marinates for at least 30 minutes.

Heat grill to med-high heat and place marinated chicken tenders on the hot grill cooking for about 7-8 minutes or until an internal temperature of 160°F. Flip half way thru cooking.
- Once done, divide onto plates and top with strawberry salsa.
Notes
- Making the strawberry salsa ahead of time works fine, just keep in mind the longer it sits together the more the strawberries will absorb the liquid and change color and texture from the balsamic. I found about 30 minute was perfect but it still tasted with a longer marinade. It just didn't look as pretty.
